Creamy Southern Coleslaw
Serves 8

Ingredients
3 cups shredded red or green cabbage1
1 red bell pepper, seeded and finely chopped
1 small carrot, peeled and grated
½ cup Basic Blender Mayonnaise
2 tablespoons cider vinegar or white wine vinegar
½ teaspoon celery seed
1 to 2 packets Splenda
½ teaspoon salt
½ teaspoon freshly ground pepper

Directions

  1. In a large bowl, whisk together with mayonnaise, vinegar, spices and Splenda.
  2. Add the cabbage, pepper and carrot and toss to coat evenly.
  3. Cover and refrigerate for several hours, if possible, before serving
  4. Keep cool if transporting to serve al fresco.

1As a timesaver, use 3 ½ cups of a prepackaged slaw mix in place of the cabbage, bell pepper and carrot.
