Creamy Southern Coleslaw
Serves 8
Ingredients
3 cups shredded red or green cabbage1
1 red bell pepper, seeded and finely chopped
1 small carrot, peeled and grated
½ cup Basic Blender Mayonnaise
2 tablespoons cider vinegar or white wine vinegar
½ teaspoon celery seed
1 to 2 packets Splenda
½ teaspoon salt
½ teaspoon freshly ground pepper
Directions
- In a large bowl, whisk together with mayonnaise, vinegar, spices and Splenda.
- Add the cabbage, pepper and carrot and toss to coat evenly.
- Cover and refrigerate for several hours, if possible, before serving
- Keep cool if transporting to serve al fresco.
1As a timesaver, use 3 ½ cups of a prepackaged slaw mix in place of the cabbage, bell pepper and carrot.
