Oven Barbecued Hot Wings1

Ingredients
Make a dipping sauce in advance with the following ingredients.
1 cup water
½ cup olive oil
½ cup red wine vinegar
2 tablespoons chili powder
½ teaspoon cayenne pepper
- Mix all ingredients together in a saucepan, bring to a boil
- Continue to boil for 5 minutes
- Remove from heat and set aside.
To cook the wings:

Directions
- Heat a grill pan over medium high heat.
- Meanwhile, cut the tips from the wings with a heavy knife or poultry shears.
- Rinse the wings and pat dry with paper toweling.
- Sprinkle the wings with coarse salt and ground pepper.
- Arrange the wings on the grill pan and cook them for about 5 minutes per side
- Remove them from grill pan with tongs and arrange on an oiled broiler pan.
- Place the wings in a 400-degree oven for 30 minutes.
- Reduce oven temperature to 350 degrees, flip all wings over and return to the oven to cook 30 minutes more.
- Reduce oven to 200 degrees. Flip wings again and cook for another 30 to 45 minutes.
- When ready to serve, remove wings from the oven and immediately dip them into the dipping sauce and place on serving platter.
- Serve immediately if possible; although they will hold for up to 30 minutes, tightly covered in foil, in a warm oven, they'll lose some of their crispy texture.
