Chewy Fudge Brownies

Ingredients
2 ounces unsweetened baking chocolate, roughly chopped
1 stick unsalted butter
24 packets Spenda sweetener
1 tablespoon Thickenthin notSugar product
2 eggs
½ cup almond flour
½ teaspoon vanilla extract
1/8 teaspoon salt
Directions
- In a medium to large glass mixing bowl, melt butter in microwave, about 2 minutes on high. Cover to prevent spattering.
- In a medium saucepan, bring about 2 inches water to a boil, reduce heat to simmer to create a double boiler to melt the chocolate.
- Add the chopped chocolate to the bowl with the melted butter and place the bowl atop the simmering water in the saucepan. Allow the chocolate to melt.
- Remove from the heat, add the Splenda and stir until the mixture is smooth.
- Beat in eggs one at a time, then beat in the vanilla and salt.
- Gently stir in the almond flour.
- Pour batter into prepared pan and bake at 350 degrees until just set in the middle, about 20 to 25 minutes.
- Cool on rack for 10 to 15 minutes.
- Cut into 16 pieces; store, tightly covered at room temperature. Will not keep longer than a day or two.
