Chewy Fudge Brownies
Serves 16

Ingredients
2 ounces unsweetened baking chocolate, roughly chopped
1 stick unsalted butter
24 packets Spenda sweetener
1 tablespoon Thickenthin notSugar product
2 eggs
½ cup almond flour
½ teaspoon vanilla extract
1/8 teaspoon salt

Directions

  1. In a medium to large glass mixing bowl, melt butter in microwave, about 2 minutes on high. Cover to prevent spattering.
  2. In a medium saucepan, bring about 2 inches water to a boil, reduce heat to simmer to create a double boiler to melt the chocolate.
  3. Add the chopped chocolate to the bowl with the melted butter and place the bowl atop the simmering water in the saucepan. Allow the chocolate to melt.
  4. Remove from the heat, add the Splenda and stir until the mixture is smooth.
  5. Beat in eggs one at a time, then beat in the vanilla and salt.
  6. Gently stir in the almond flour.
  7. Pour batter into prepared pan and bake at 350 degrees until just set in the middle, about 20 to 25 minutes.
  8. Cool on rack for 10 to 15 minutes.
  9. Cut into 16 pieces; store, tightly covered at room temperature. Will not keep longer than a day or two.
