Drunken Rubies (Pomegranates in Sweet Red Wine)
Serves 4

Ingredients
2 pomegranates
1 cup dry red wine
4 packets Splenda
1 – 2 teaspoons Thickenthin notSugar (optional)
1 lemon, zest only

Directions

  1. Open and remove the seeds from the pomegranates, separating them from the white pith and rind.
  2. In a saucepan over medium high heat, mix the Splenda and lemon zest with the red wine and bring to a boil. Reduce by one-half over simmering heat to concentrate flavor and slightly thicken the syrup. Optional, add 1 to 2 teaspoons Thickehthin notSugar to thicken the syrup quicker and more fully.
  3. Pour the mixture over the pomegranates.
  4. Cover tighty and chill for at least 1 hour prior to serving; several hours is fine.
  5. When ready to serve, divide pomegranate seeds and sweetened wine evenly among 4 stemmed dessert or martini glasses. Garnish with a mint sprig. Also makes a great topping to jazz up low carb vanilla ice cream.
