Festive Frijoles
Serves 4

Ingredients
1 Tablespoon coconut oil
2 cans black soybeans, rinsed and drained
1 small red onion, diced
1 can diced tomatoes
1 small can diced roasted green chile
¼ teaspoon cumin
¼ teaspoon roasted garlic powder
¼ teaspoon black pepper
¼ teaspoon salt
¼ teaspoon cayenne pepper (optional)

Directions

  1. Melt the coconut oil in a medium to large saucepan over medium heat
  2. Saute the diced onion until translucent.
  3. Add all remaining ingredients and stir to combine
  4. Bring briefly to a boil, reduce heat to low, and cook, stirring occasionally, about 20 minutes until heated through and thickened.
  5. If necessary, mash a few of the beans with a potato masher or fork to thicken the juices.
  6. Serve hot.
