Almost-Real Maple Syrup

As the name suggests, this imposter is not quite as good as the pure Vermont original, but it’s quite tasty nonetheless. It recalls the homemade burnt sugar syrup Momma used to make on Sunday mornings…but without the metabolic mayhem promised by real sugar. And unlike its commercially produced, low-carb cousins, it avoids the use of sugar alcohols and the side effects they can cause.

Ingredients
2 cups water
24 packets Splenda
1 tablespoon Thickenthin notSugar thickener1
1 tablespoon maple extract

Directions

  1. In a medium saucepan, mix the water, Splenda, and Thickenthin and allow to thicken. (Adjust the amount of Thickenthin to achieve the desired syrup consistency.)
  2. Add maple extract and bring to a brief boil.
  3. Reduce heat to keep warm until ready to serve.
1ThickenThin not Sugar is a fiber thickener that doesn’t contribute meaningfully to effective carb content. It is available in low carb specialty stores or online.
