Yogurt Berry Power Cup
Serves 4
If you crave the creamy sweetness of commercial fruit flavored
yogurt, but hate the slug of high-fructose-corn-syrup that sweetens
most products, you’ll really love this quick and easy recipe. It
makes a great quick breakfast or after school snack for kids, but
kids of all ages can get their protein, fruit, and calcium fix here.
Ingredients
16 ounces plain, unsweetened, yogurt (organic if possible)
2 cups fresh or frozen unsweetened mixed berries
2 packets Splenda or Stevia Plus (optional)
4 scoops (about 80 grams) vanilla or strawberry low carb whey protein powder
Directions
- Line a 2 cup mesh strainer with a paper coffee filter and place the strainer over a mixing bowl sufficiently large to suspend it and catch filtered liquid.
- Fill the filter with the yogurt, cover with a clean cloth or waxed paper, and set the strainer-bowl in the refrigerator for several hours, during which time much of the liquid trapped in the yogurt will drain into the bowl and the yogurt will thicken considerably.
- Meanwhile, in a blender or food processor, puree the berries with the sweetener and protein powder and refrigerate until ready to use.
- When ready, place the thickened yogurt into a mixing bowl, stir in the berry puree, mixing thoroughly.
- Serve in one-cup portions. Store the remainder, tightly covered, in the refrigerator for up to 3 days.
