Hi Pro French Toast Fingers
Serves 4

Who doesn’t love French toast for breakfast? Here’s a quick and easy lower carb version with an added punch of extra protein to get kids and adults off to a good start. Trim the bread and make the egg mixture the night before and you’ll have them on the griddle in no time.

Ingredients
8 slices low carb bread
3 eggs
¾ cup half and half
1 scoop (about 20 grams) vanilla or natural flavor low carb whey protein powder
½ teaspoon vanilla
2 packets Splenda
Pinch nutmeg
1-2 tablespoons unsalted butter

Directions

  1. Trim the crust1 from the low carb slices; cut bread into fingers by cutting in half lengthwise. (If not cooking right away, store overnight in a zip closure bag.)
  2. In a shallow bowl, beat the eggs until light yellow. Whisk in the half and half, protein powder, Splenda, vanilla, and nutmeg. (If not cooking right away, store in a container with a tight fitting lid, refrigerated, overnight.)
  3. Melt 1 tablespoon of butter on a griddle or skillet over medium heat.
  4. Dip each finger in the egg batter and fry the fingers until golden brown, turn and brown evenly on other side.
  5. Remove to a warm plate to hold until entire batch has been cooked.
  6. Top with melted butter and Almost Real Maple Syrup or commercial low carb syrup, or Maple Surple.
1Make breadcrumbs of the saved crusts by pulsing them in a food processor. Store in zip freezer bags until ready to use at some future time.
