Cucumber-Salmon Bites
Makes 32 pieces

Tasty, refreshing, and light, these appetizers are easy enough to serve often and pretty enough for a party. And they’re so easy on the carb budget that you can eat your fill guilt free. Although the recipe doesn’t call for it, they’d be even prettier with a sprinkling of red caviar to dress up their tops in place of the black olive slice.

Ingredients
2 large English cucumbers, washed, unpeeled
4 ounces smoked salmon, sliced thin
4 ounces cream cheese, softened
2 tablespoons fresh flat leaf parsley
1 teaspoon hot wasabi powder
1 tablespoon soy sauce
˝ teaspoon black pepper
32 black olive slices

Directions

  1. Trim the ends from the cucumbers and slice each one into approximately 16 rounds about ˝-inch thick to make 32 platforms.
  2. Slice the salmon into 1–inch squares, reserving the oddly shaped scraps for the cheese.
  3. In a food processor, put the cream cheese, salmon scraps, parsley, wasabi powder, soy sauce, and black pepper and blend until smooth.
  4. To assemble the bites, top each cucumber round with a slice of salmon and a dollop of the salmon cream cheese.
  5. Garnish each bite with a black olive slice.
