Proatmeal

In the cold of winter, there’s nothing more satisfying in the morning than a big steaming bowl of hot cereal. Unfortunately for low carbers, especially those in the earliest and most restrictive phases of the diet, the gram counts exceed specified carb allowances. However, you can enjoy a delicious bowlful made with nut meals and whey that’s as hearty and warming as the original and takes a far smaller bite from your carb budget. Although lower in carb, it’s not low calorie, so enjoy in moderation.
Ingredients
2 cups water
½ teaspoon salt
¾ cup walnut, almond, or pecan meal
¼ cup half and half
2 scoops (about 40 grams) natural or vanilla low carb whey protein powder
1 tablespoon ThickenThin notCereal1 (or 2 teaspoons xanthan gum)
2 packets Splenda (optional)
2 teaspoons sliced almonds or chopped walnuts or pecans
2 teaspoons unsalted butter
2 teaspoons raisins (optional)
Directions
- Bring water to a rolling boil in a covered saucepan, then add the salt.
- Slowly add the nut meal, stirring constantly to avoid forming lumps.
- Reduce heat to low and simmer, uncovered, for about 20 minutes until the mixture begins to reduce in volume and slightly thicken.
- In a small bowl, mix the half and half with the Splenda, whey protein powder, and ThickenThin notCereal or xanthan gum, stirring until smooth.
- When the faux-oats have cooked, add the butter and allow to melt.
- Remove from the heat and stir in the half and half mixture.
- Divide hot cereal equally in two bowls, top each with 1 tablespoon of chopped nuts and 5 or 6 raisins.
- Serve immediately.
