Thai Peanut Sauce
Serves 6
We love this slightly hot, slightly sweet, slightly salty sauce as a marinade and
condiment for grilled chicken skewers Chicken Satay, but it’s also great
to toss with steamed spaghetti squash and a handful of toasted sesame seeds as a
side dish for Asian inspired meals.
Ingredients
½ cup natural peanut butter
2 packets Splenda or Stevia
¼ cup soy sauce
1 tablespoon rice vinegar or white wine vinegar
5 or 6 drops of Tabasco (or to taste)
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
1 tablespoon (approximately) hot water
Directions
- In a bowl, beat together the peanut butter, sweetener, soy sauce and vinegar.
- Add the salt and pepper and hot sauce and mix thoroughly. Check heat and add more hot sauce if desired.
- While stirring, dribble in the hot water to thin the sauce to the consistency of un-whipped heavy cream.
