Thai Peanut Sauce
Serves 6

We love this slightly hot, slightly sweet, slightly salty sauce as a marinade and condiment for grilled chicken skewers Chicken Satay, but it’s also great to toss with steamed spaghetti squash and a handful of toasted sesame seeds as a side dish for Asian inspired meals.

Ingredients
½ cup natural peanut butter
2 packets Splenda or Stevia
¼ cup soy sauce
1 tablespoon rice vinegar or white wine vinegar
5 or 6 drops of Tabasco (or to taste)
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
1 tablespoon (approximately) hot water

Directions

  1. In a bowl, beat together the peanut butter, sweetener, soy sauce and vinegar.
  2. Add the salt and pepper and hot sauce and mix thoroughly. Check heat and add more hot sauce if desired.
  3. While stirring, dribble in the hot water to thin the sauce to the consistency of un-whipped heavy cream.
