Simple Tapenade
Makes about 3 cups (about 48 tablespoons)
Spread a couple of tablespoons over chicken breasts or fish fillets before baking, spread onto low-carb toast for an appetizer, wherever you use it, the salty savory flavor of this olive paste will add a gourmet touch to even the simplest dish. It packs a wallop, not only with great taste, but also in nutrition from all the good fats and antioxidants it contains.
Ingredients
3 cups mixed olives (pitted)
2 anchovy fillets
¼ cup capers
¼ cup oil-packed sun-dried tomatoes
1 cup extra-virgin olive oil
Directions
- Place olives into the work bowl of a food processor and pulse to break up.
- Add the anchovies, capers, tomatoes and olive oil and blend until the mixture becomes a smooth paste.
- If not using right away, transfer to an airtight container and refrigerate for up to a week.
