Stealthy Garden Pizza
Makes 4 individual pizzas
There’s nothing kids love better than pizza and if you play it right, it can be a very healthy meal. Even if your kids turn up their noses at any colorful thing resembling a vegetable—as our youngest son did—they’ll never spot one here. With this dish, they’ll eat their veggies and ask for more. Just one will fill even the hollow leg of an adolescent boy; younger kids or those with smaller appetites can happily split a pizza.
Ingredients
4 Cheesy Waffle Pizza Platforms
1 can (about 14 ounces) plain pizza sauce
1 small jar baby food peas or green beans
1 small jar baby food carrots or winter squash
4 ounces sliced provolone cheese
2 cups shredded mozzarella cheese
Directions
- Place the waffles onto a cookie or baking sheet and crisp them slightly in a 400 degree oven for a minute or two then remove from the oven.
- In a bowl, combine the pizza sauce and baby food veggies until thoroughly blended.
- Cover each waffle with a layer of provolone slices.
- Ladle about a third cup of the pizza sauce onto each waffle and spread evenly almost to the edges.
- Top with ˝ cup of shredded mozzarella.
- Bake in oven for 5 to 7 minutes, until cheese is completely melted.
- Serve immediately.
1The protein and carb counts for this recipe are for a whole pizza, a portion suitable for teens and adults. For smaller children, half or one third of a pizza should be enough.
Variation: Meat Lovers’ Garden Pizza. If your pizza fans love meat on their pizza, by all means put a couple of ounces of pepperoni, cooked hamburger, or cooked sausage on in step #4 and then top with the cheese.
