Cheesy Waffle Pizza Platforms

These simple waffles make the perfect thick crust for a personal pizza for kids of any age. The waffles themselves are so filling that even the hungriest adolescent may not be able to eat a whole one once it’s covered with tasty pizza toppings—even if those toppings are simply Stealthy Garden Pizza Sauce and cheese.

Ingredients
1 cup almond flour
1 teaspoon baking powder
½ teaspoon salt
¼ teaspoon dried oregano
4 ounces cream cheese, softened
6 eggs
¼ cup heavy cream
¼ grated parmesan cheese

Directions

  1. Preheat waffle iron, oiling if necessary to prevent sticking.
  2. Mix dry ingredients together in a small bowl
  3. Beat softened cream cheese and two eggs until smooth. Add remaining eggs one at a time and beat thoroughly between additions.
  4. Beat in the heavy cream.
  5. Fold in the dry ingredients. Do not overbeat at this stage or waffles will be tough.
  6. Spoon about 1/3 cup batter into hot waffle iron and cook for about 3 minutes, until golden brown. These waffles will brown a little earlier than their high carb cousins, so keep an eye on them.
  7. Allow waffles to cool slightly before topping with pizza toppings. These waffles will also freeze for later use, simply cool completely, separate waffles with paper towels, enclose in zip freezer bags and store in freezer for several weeks.
