Sautéed Broccoli with Sesame Fire Butter
Serves 6

Broccoli is a carb bargain and a real nutritional powerhouse, filled with vitamins, minerals, and sulforaphane. While many people share the elder President Bush’s dislike for broccoli, this recipe is a preparation that’s sure to win converts.

Ingredients
1 teaspoon olive oil
¼ cup water
1 medium head broccoli (about 6 cups florets)
2 tablespoons Sesame Fire Butter

Directions

  1. Rinse the head well. Trim away the thick stem of the broccoli where it meets the thinner stalks and separate the florets, leaving a stem about 1½ inches long. Peel the thick stem and dice it. Set aside. Cut the florets in half lengthwise and then split lengthwise again (and again for large florets) to make ½-inch thick pieces containing both floret and stem. This method will yield bite-sized pieces that cook quickly and evenly—no mushy tops and undercooked stems.
  2. Lightly oil a skillet with the olive oil and warm it on medium high for about a minute. Remove from heat, add the broccoli and the water, cover tightly, and return to high heat. Cook, shaking skillet now and again, for about 4 minutes until broccoli is tender and the water is gone.
  3. Uncover the skillet, turn off the heat, add the Sesame Fire Butter and allow it to melt. Toss the broccoli to coat evenly. Serve.
