Raspberry Coulis
Serves 4 to 6

Drizzled on the dessert plate to dress up a slice of Coconut Almond Cake, pooled under a slice of Flourless Chocolate Cake, or poured over low carb ice cream, this simple fruit sauce will add a sweet-tart zip and gorgeous color to any presentation.

Ingredients
1 bag (about 10 ounce) frozen unsweetened raspberries, thawed
4 packets Splenda or Stevia
1 lemon, juice and zest

Directions

  1. Place all ingredients into blender or food processor and puree until smooth.
  2. Use immediately or store in an airtight container for up to 3 days.
