Greens, Eggs, and Ham
Serves 2
Ingredients
¼ onion, diced
1 clove garlic minced or pressed
2 cups fresh spinach leaves
4 ounces cooked ham or Canadian bacon, diced
1 T olive oil, 1 T butter
6 whole eggs, beaten
2 ounces cream cheese, cut in ½ inch cubes
salt pepper
Directions
- Heat oil and butter in a skillet. Saute onion and garlic until translucent; do not burn
- Add spinach leaves and wilt
- In a bowl, beat the whole eggs, add salt, pepper, diced ham, and cream cheese cubes. Add the egg mixture to the sautéed ingredients in the skillet and cook over medium to medium high heat, gently turning the eggs as the cheese melts.
- Serve immediately
