Green Pea and Asparagus Casserole
Serves 4

Ingredients
1 can (15 oz.) small green peas
1 cans (about 15 oz.) green asparagus spears
2 tablespoons unsalted butter
2 tablespoons ThickenThin product (or 1 teaspoon xantham gum)
½ cup heavy cream
½ cup shredded cheddar cheese
½ teaspoon coarse salt
½ teaspoon black pepper

Directions

  1. Drain the peas and asparagus and reserve 1 cup of their liquid.
  2. Put the butter into a 1-quart saucepan over medium heat.
  3. Sprinkle the ThickenThin (or xantham gum) over the butter and mash with the tines of a fork to combine.
  4. Add 2-3 tablespoons of the reserved pea and asparagus juice, and whisk with the butter to make a smooth paste.
  5. Add remaining pea and asparagus juice and whisk until smooth.
  6. Add the heavy cream, cheese, salt and pepper, continue to heat and allow sauce to thicken slightly. If the sauce remains too thin, you may sprinkle on and whisk in another teaspoon or two of the ThickenThin product or a bit more xantham gum.
  7. Place a thin coating of the cheese sauce on the bottom of a 2 quart casserole or loaf pan, top with half the peas, half the asparagus spears, and half the remaining cheese sauce. Repeat the layers with the other half of the peas, asparagus, and sauce.
  8. Place into a 325 degree oven for about 30 minutes until heated through.
