Tiramisu
Serves 10

Ingredients
1 – loaf Golden Pound Cake
1 – recipe Espresso Syurp
1 – recipe Marscarpone Filling

Espresso Syrup
½ cup strong brewed espresso
1/3 cup Splenda
1/3 cup brandy

  1. Stir Splenda into the hot espresso to dissolve.
  2. Add brandy
  3. set aside to cool.
Marscarpone Filling
4 – large egg yolks
1/3 cup splenda
¼ cup dry marsala wine
½ pound marscarpone cheese, softened
½ pound cream cheese, softened
  1. Whisk egg yolks, splenda and marsala in a bowl
  2. Whisk egg yolk mixture over a pan of simmering water for 2-3 minutes until foamy and thickening
  3. Remove from the heat
  4. With an electric mixer, whip the mixture on medium speed until cooled
  5. Beat in the marscarpone and cream cheese

Directions

To assemble:

  1. Cut the Golden Pound cake in half across the middle and down the length to make four quarters. Cut each quarter in three thin slices lengthwise.
  2. Line the bottom of a 2 quart gratin dish or a glass loaf or baking dish with 4 slices of the cake.
  3. Soak the cake with one-third of the espresso syrup.
  4. Spread with a third of the marscarpone filling.
  5. Top with four more cake slices, soak them with another third of the syrup, and another third of the marscarpone filling.
  6. Finish with another layer of cake, soaked with espresso syrup, topped with marscarpone filling.
  7. Dust with unsweetened cocoa powder
  8. Cover and refrigerate for several hours before serving.
