Tiramisu
Serves 10
Ingredients
1 – loaf Golden Pound Cake
1 – recipe Espresso Syurp
1 – recipe Marscarpone Filling
Espresso Syrup
½ cup strong brewed espresso
1/3 cup Splenda
1/3 cup brandy
- Stir Splenda into the hot espresso to dissolve.
- Add brandy
- set aside to cool.
Marscarpone Filling
4 – large egg yolks
1/3 cup splenda
¼ cup dry marsala wine
½ pound marscarpone cheese, softened
½ pound cream cheese, softened
- Whisk egg yolks, splenda and marsala in a bowl
- Whisk egg yolk mixture over a pan of simmering water for 2-3 minutes until foamy and thickening
- Remove from the heat
- With an electric mixer, whip the mixture on medium speed until cooled
- Beat in the marscarpone and cream cheese
Directions
To assemble:
- Cut the Golden Pound cake in half across the middle and down the length to make four quarters. Cut each quarter in three thin slices lengthwise.
- Line the bottom of a 2 quart gratin dish or a glass loaf or baking dish with 4 slices of the cake.
- Soak the cake with one-third of the espresso syrup.
- Spread with a third of the marscarpone filling.
- Top with four more cake slices, soak them with another third of the syrup, and another third of the marscarpone filling.
- Finish with another layer of cake, soaked with espresso syrup, topped with marscarpone filling.
- Dust with unsweetened cocoa powder
- Cover and refrigerate for several hours before serving.
