Guacamole Salad
Serves 4
Ingredients
2 ripe Haas avocados, mashed
1 clove garlic, minced
1 lime, juiced
2 roma tomatoes, diced small
1 small red onion, diced small
1 serrano pepper, seeded and minced
½ tsp salt (or to taste)
½ tsp black pepper (or to taste)
handful fresh cilantro, chopped
2-3 cups fresh romaine lettuce cut julienne
Directions
- soak the diced onion in water with 1 tablespoon lime juice for 5 to 10 minutes to take out the bite of the raw onion
- in a separate glass or non-metal bowl, add the remaining lime juice and the minced garlic
- peel and seed the avocado, dice, put into bowl and mash with lime juice and garlic until pretty smooth
- add the tomatoes, the onions and juice, salt, pepper, minced serrano, and cilantro and combine
- taste for seasoning
- serve on a bed of julienne of romaine lettuce
- if not to be eaten immediately, cover by placing a sheet of plastic wrap directly onto the surface of the guac and sealing out all air. Cover the bowl with another piece of plastic and refrigerate. Bring to room temp for serving.
