Guiltless Margaritas
Serves 4

Ingredients
1 cup fresh lime juice
1 cup cold water
1 cup homemade low carb simple syrup
1 ½ cups tequila
zest of 1 orange

Directions

  1. Juice 8 to 10 fresh limes, enough to collect 8 ounces, set aside.
  2. In a small saucepan, combine 1 cup water with Splenda. Sprinkle in 1 Tablespoon ThickenThin product (or 2 tsp xantham gum) and stir to dissolve, breaking up any lumps that form.
  3. Heat gently to thicken slightly.
  4. Add orange zest and set aside to cool.
  5. In a 2 quart pitcher, mix the lime juice, cooled syrup, and tequila.
  6. Chill, if possible, for at least an hour.
  7. Moisten the rim of a wide mouthed glass with lime juice or water, invert into coarse salt, if desired.
  8. Pour chilled margarita over crushed ice.
  9. Garnish with lime slice.
