Very Berry Syrup
Serves 4
Ingredients
1 package frozen mixed berries, thawed
2 cups water, divided use
10 packets Splenda
½ lemon, juice and zest
1 tablespoon Thickenthin notSugar thickener
Directions
- In a blender, combine thawed berries, 1 cup of the water, and the lemon juice. Blend in pulses until smooth.
- Put the remaining cup of water into a saucepan over medium heat. Whisk in the Splenda and thickener and allow syrup to thicken. Add additional thickener by the teaspoon if thicker syrup desired, bearing in mind that the fruit puree will add some thickness.
- Add the pureed fruit and lemon zest.
- Bring briefly to a boil, reduce heat to simmer until ready to serve.
